Pretend

We all had such a wonderful time with Mimi.  It was really sad to see her go.  Jenna kept saying, "Mimi I don't want you to go.  I want you to stay forever!"  It was sweet, and sad.

Barely hanging on...

It has been a busy few weeks, and the busyness continues for a few more.  No complaints here (well, not much complaining anyways), just a bit tired, and a little too busy to blog anything but a short little posts here and there.  Hope everyone is enjoying this last little part of summer.  I can't believe we are already half way through August!

Life has officially changed a bit


If you are in my house, you need to know the following:

1.  If my coffee cup in on the floor, Elsie will try to chug it.
2.  If there is a cord plugged into the wall, Elsie will try to pull at it.
3.  If there is a fan nearby, Elsie will try to pull it over.
4.  If there is a magazine near the ground, Elsie will rip it to pieces.
5.  If the bathroom door is open, Elsie will find the garbage can at a record speed.
6.  If it is after 4pm, Elsie's only "voice" is a high pitched scream, sometimes out of happiness, sometimes not.
7. If there is a penny on the ground, Elsie will try to swallow it. 

She is an exhausting joy right now.

minor injuries all around

On our first day home, Elsie cut her eye on the fireplace edge, I burned my finger on the flaming hot pan, and Jenna made a quick turn and ran straight into the edge of the bedroom door.  I guess that for the three of us, home holds more hazards then camping does.  Don't worry though, the "boo-boo bunny" (ice pack) was there for all three of us.

Recipes

I am in the process of making a list of all my favorite recipes so that when I meal plan for the week I have a list to go to when my mind goes blank and all I can think of is "burritos, spaghetti, eggs and toast...). So far I have listed 29 meals that I know my family loves and a few new ones that I want to try in the next week or two. My plan is to continue adding to this list as I try new recipes that the family enjoys. On the list I put where each recipe is found (cookinglight.com, betterhomes cookbook, family cookbook, etc) so that I can easily find the recipe when making my grocery list. Now I know that I could go a few steps further and put it all in the computer and have a grocery shopping list automatically made for the meals I choose for the week, but for now I just want a place to go when my creativity is at a low.

Lately I have been trying a lot of new recipes. Partly because of the contest we have at choose to bloom, and partly because I am bored with my current recipes. I have found some DE-LISH meals that the family loves!!


I was looking for a new way to enjoy green beans and found this recipe on www.cookinglight.com.  I was surprised how much I like it because I am not a big pork fan.  Here's the recipe, and of course a picture from when I cooked it :)

Pork, Cashew, and Green Bean Stir-fry

Ingredients
1/4 cup low-sodium soy sauce
2 teaspoons cornstarch
1 pound pork tenderloin, cut into 1/4-inch-thick slices 
4 cups (2-inch) cut green beans (about 1 pound)
2 teaspoons dark sesame oil
Cooking spray
1 to 2 tablespoons minced peeled fresh ginger
2 garlic cloves, minced
1/4 cup fat-free, less-sodium chicken broth
2 cups hot cooked rice
1/4 cup chopped unsalted cashews, toasted

Preparation
Combine the soy sauce and cornstarch in a medium bowl, and add pork, stirring to coat. Cover and chill.
Place beans in a large saucepan of boiling water, and cook 5 minutes. Drain beans; plunge into ice water. Drain.

Heat oil in a large nonstick skillet coated with cooking spray over medium-high heat. Add ginger and garlic; sauté 1 minute. Add pork mixture; stir-fry 1 1/2 minutes. Stir in green beans; stir-fry 1 1/2 minutes or until pork is done. Stir in broth; reduce heat, and simmer 2 minutes. Serve over rice; sprinkle with cashews.

Cultus 2008








And now for a summary of our vacation. The pictures to the right show some of the fun, silly, cold, caged, relaxing, and beautiful times we had this year at Cultus.   


Day One:  Wonderful drive there.  We stopped every hour (by choice) at a rest stop and for the first time we didn't have to stop for a little someone to potty on the roadside.  We got a little lost and ended up taking a beautiful scenic route, passing by two or three amazing lakes.  We finally got there and headed to camp.  I took a deep breath of mountain air, and looked at the beautiful lake that I have been vacationing at every year since I was 6 months old, and I was so happy.  We unpacked, set up, and the fun began.

Day Two and Three:  So fun!  The weather was amazing and hot, Elsie was sleepy and napped a lot of the day which was nice since sand and dirt camping is a tough for a new crawler.  Jenna enjoyed every moment with her cousins.  I got to waterski for the first time in two years (I was 6 months preggo last year) and thankfully it is much like 'riding a bike'.  Eric surfed behind the boat and read, and we all played games and talked around the campfire when the kids went to bed.  More family arrived, adding the total to 35+ in our group, 24 were related, the rest were friends.  We took up almost half of campsite.  

Day Four:  The trouble began.  We woke up to a bit of rain, followed by more rain.  It wasn't ever very cold, just a wet and muddy morning.  The kids played in the rain and under cover.  Weston was a wet mess, and Elsie was a bit on the miserable side, wanting to be down but not really wanting to be down.

Day FIve:  Pack up day.  We woke up to a beautiful sunrise, only to be followed by rain.  Then blue sky, then stormy, then partly sunny, then hard hail and some serious lightening bolts.  It was crazy weather, and really hard to pack up in.  But we did it.  And apparently when we left the sun came out and it has been beautiful ever since :)  


Overall, it was a great vacation. I love it there for many reasons - the nostalgia, the beauty, and because it is so unlike normal daily life. Even though I am still changing diapers and making lunches, it is iall with a view of the lake. Elsie's leftovers that end up all over the floor don't have to be swept up, they are just enjoyed by some little critter later. And Jenna was constantly entertained and so happy, playing with her cousins and in the water and the sand. She is a great camper. She loved to talk about the "stinky potty" (the outhouse) and the whereabouts of the bugs. She played hard, and slept hard. I think we all did. I do look forward to the coming years when camping will become a little bit easier (camping with a 9 month old crawler who puts everything in her mouth is a little exhausting). But those years will come, and for now we will enjoy what we have and love the precious moments and great memories we are making when the kids are young.
