The GINORMOUS zucchini

On the bottom is a normal sized, garden grown, delicious zucchini. On the top is a Wood grown, crazy large, picked a little late Wood Family zucchini. Crazy. I suppose if you leave them in the garden long enough they will just keep growing, but seriously! What are we going to do with 16" of pure zucchini?! And with these zukes came about 8 others, all a size somewhere between these two. And there are more coming!!! Does anyone have a bunch of zucchini recipes?

Wow Megan! I am impressed. You are quite the gardener:) Do you ever just slice zucchini, top with cheese, salt & pepper and microwave? yum. Enjoy those yummy things. Maybe you can make a main course, dessert and drink out of them on Thursday:)

Zucchini 'Crab' Cakes
Original recipe yield:
4 to 6 servings

PREP TIME 20 Min
COOK TIME 10 Min
READY IN 30 Min


INGREDIENTS
2 1/2 cups grated zucchini
1 egg, beaten
2 tablespoons butter, melted
1 cup bread crumbs
1/4 cup minced onion
1 teaspoon Old Bay Seasoning TM
1/4 cup all-purpose flour
1/2 cup vegetable oil for frying

DIRECTIONS
In a large bowl, combine zucchini, egg, and butter or margarine. Stir in seasoned crumbs, minced onion, and seasoning. Mix well.
Shape mixture into patties. Dredge in flour.
In a medium skillet, heat oil over medium high heat until hot. Fry patties in oil until golden brown on both sides.

Cheesy Zucchini Casserole
Original recipe yield:
4 servings

PREP TIME 20 Min
COOK TIME 1 Hr
READY IN 1 Hr 20 Min


INGRED:
4 slices bread, cubed
1/4 cup melted butter
2 cups cubed zucchini
1 large onion, chopped
1 teaspoon garlic salt
1 egg, beaten
2 cups shredded Cheddar cheese


DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
Place bread cubes in a medium bowl and pour melted butter over the bread. Add the zucchini, onion, garlic salt and egg; mix well. Transfer the mixture into a 9x13 inch baking dish and top with the cheese.
Bake, covered, in preheated oven for 30 minutes. Then uncover the dish and bake for another 30 minutes.

Zucchini Slaw

Original recipe yield:
4 servings

PREP TIME 10 Min
COOK TIME 15 Min
READY IN 25 Min



INGREDIENTS
1 teaspoon olive oil
2 medium zucchini, finely chopped
1/2 medium onion, finely chopped
3 tablespoons Italian salad dressing
1 bunch chopped fresh parsley


DIRECTIONS
Heat the olive oil in a saucepan over medium-low heat, and cook the zucchini and onion until onion is very tender. Mix in the Italian salad dressing and parsley, and continue cooking until heated through. Serve warm.

Zucchini slaw will never work. The recipe calls for "medium" zucchinis.

(I had to delete my previous comment because I misspelled zucchini. How embarassing.)

We currently have 11 zuccs that are 12 inches and over on our counter....5 or 6 of them are at the 16 inch mark. I am amazed at how they triple in size overnight. Freaky vegetables.

Hi Megan,
Nice! We've got 3 big zuc.'s on the counter. I just tried this the other day. Peel the monstrous thing with a potato peeler, then slice a 1/2 inch thick strip down the length on all 4 sides. Toss the middle spongy, seedy part. Then I used 'I can't believe it's not butter' and with my finger (ya, don't tell my husband), rubbed both sides, sprinkle with garlic salt and throw on the BBQ. It was delish! And my kids loved it. go figure. I have a couple of other zuc. recipes I'll e-mail you. Zuc. patties (for inside bagels with melted cheese) and choc. Zuc. bread. :)
